I am starting with two Threads. Hot Springs and White Water.

Who doesn't like to combine a trip with some fun in the water?

I did a little raft trip down Sespe Creek 2 years ago. Started up by Piedra Blanca and finished 4 days later in Filmore where the 126 crosses the river. The trip is 33 miles and about 15 miles into the trip is a nice hot spring that is a just few miles up a side canyon. There is also another hot spring a few yards off the river but not as nice as the one you need to hike to. Here are a few shots of the river. Sorry no hot spring shots.

The Columbia River in Oregon has a bunch of waterfalls along one section of the highway. Almost ten I think, all within 1/2 mile hike or less (which also means more crowds).

All through Hwy I-84.

Some around Arizona?
I remember on a trip with BajaTaco, we got to appreciate a nice river around Sedona.

We did a recent trip up to the Kern River and had a great time. We had never been there before. The upper kern is great for fishing and swimming(under the right conditions), and camping. Next time I would bring some inner tubes to float some of the sections. I'll have to do a little write-up.
